tacxperiments #2 - ostrich mousstakos.

OMG it's time for another tacxperiment! TACXPERIMENT DOS! did you head straight to the kitchen & construct the recipe from our inaugural tacxperiment immediately after reading it? what? you didn't? what's your problem? do you have something against me & my recipes? we love you. please stop turning this into something wholly unrequited, ma'am and/or sir!

sorry. i didn't mean to yell at you so. i have a problem with rejection. you can totally make it up to me though. for our second tacxperiment, we've got a lil' middle eastern style taco made in the spirit of that tasty eggplant casserole dish known as moussaka. i made it along with my sis, who's been making ostrich moussaka a lot recently, since between the eggplant & the ostrich, it's pretty darn low-fat & fits into her whole "eating healthy" thang.

ingredients:

1/4 lb ground ostrich meat
4 pearl onions
1 round eggplant
1 tomato on the vine
1 tbsp tomato paste
1/4 cup plain greek yogurt
asiago cheese
olive oil
tortillas (optional)
pumpkin pie spice
salt
pepper

the sis had a couple softball-sized round eggplants lying around, so we took one of them & chopped it up into slices that were about a quarter inch thick. since the eggplant was softball-sized, the slices end up being about the diameter of a tortilla. in fact, if my sis hadn't wanted to test out her new tortilla press. we actually could've used the eggplants as tortillas. i suggest you get a lil' crazy & do such a thing.

we tossed the eggplant slices into this fancy nuwave oven thing the sis has but since we figure you don't have one of those, you could try broiling the eggplant for a few minutes, basically until it's slightly brown.

while this is going on, chop up a tomato (not two like pictured up above...we decided post-photo that two tomatoes would be one too many) & the pearl onions and toss them in a pan with some olive oil over medium heat.

after a few minutes, add in the ground ostrich along with the 1/4 tbsp of pumpkin pie spice. moussaka recipes often call for cinnamon & allspice & shit like that. we figured that pumpkin pie spice has all that junk in it anyhow, so we went with it. add some salt & pepper too. cook that up for about ten minutes.

while the moussaka mix is cooking up, it's time to whip up some topping for the tacos. take a 1/4 cup of the greek yogurt & mix a 1/2 teaspoon of the olive oil & a 1/2 teaspoon of the asiago cheese into it. we used a spicy olive oil but regular olive oil should be fine.

when the moussaka mix is done cooking up, it'll totally look like dog food. don't be alarmed. it's WAY better than dog food.

...& like i was saying, the sis wanted to try out her new tortilla press. these were the results...a little thicker than your average tortilla but not bad for a first attempt.

if you decide to use a tortilla, slap an eggplant slice on it, pile on some of the moussaka mix & top it with a dollop of the greek yogurt mix. what you'll have is a very filling taco with flavors that are basically reminiscent of moussaka. απολαύσετε!
